Insalata di Mare = Sea salad
If you love fish, then you’ll love this one. It’s basically octopus, olive oil and lemon juice.
If you have these three ingredients, then it’s done.
Insalata di Mare
Start by cooking the octopus in the pressure cooker with salted water. Do that for about 40-50 min.
Take it out of water, clean it and chop it into pieces.
Now dress it with olive oil and the juice of 4-5 lemons.
We ate our Insalata di Mare with these wonderful Neapolitan taralli. Taralli are made with lard,
black pepper and almonds. I know, I know, lard is a scary ingredient but believe me,
they’re one of the best things I’ve ever eaten.
